Cinco de Mayo

I love anything Mexican.  I was excited to find this fun dessert and had to try it.



If I can do it anyone can.  The dip was very yummy!

Taco salad

This week my family is having all our favorite Mexican inspired dishes. We are doing it to celebrate Cinco de Mayo and to get out of a dinner rut. Tonight we had my son’s favorite taco salad.
This is a variation of a recipe from my MIL.

You start by browning a pound of ground beef. And an oven pre heating at 300.


While the meat is browning you crush some Doritos in the bottom of a baking dish.



On top of the chips you add some chopped up lettuce.


Add a packet of taco seasoning and water to the ground beef. Let it simmer for 10 min. Then add the ground beef to the baking dish.


Add a package of Mexican cheese and crush a few chip on top. Bake until the cheese is melted. Enjoy!



Bunny Birthday Bash-food

The birthday girl had some strong opinions on the food.  She wanted lots of carrots.  I had baby carrots with ranch dressing.  In the dressing I put a few carrots with the stem and all.  The girls loved these the most.


I also made a carrot cake, my daughters favorite.  Unfortunately, it was not any of the other girls favorite.  To tie it in with the theme I made chocolate ears, eyes and a nose.


To please the other girls I made chocolate chip cookie dough cupcakes and used chocolate to make the face and ears.  For the tail I used white cotton candy.


To make these cupcakes make your favorite chocolate chip cookie dough, but leave out the eggs.  I used mini chocolate chips instead of the big ones.  Scoop out the dough and freeze overnight.  I used a box mix for the cupcakes. I put a scoop of the mix in the cupcake liners then added the frozen cookie dough.  Then I topped it off with another scoop of cupcake mix.  Bake as directed on the box.  These cupcakes were a big hit.

Valentine jars

I am making a SWEET treat for my kid’s teachers.  I usually make my chocolate popcorn and put it in a popcorn container that you can find at the $ tree or Target’s one spot.  This year I decided to do something a little different.  I picked up some little glass jars with lids at the $ tree.   In silhouette studio I wrote the word “sweet” and put it in a curvy frame.  I made more then I needed in case of mess ups.  I am so glad I did.


I then cut it out of contact paper (my frugal trick) and used glass etching cream.


I rinsed off the cream and washed the jars.  Finally I will fill them with my famous chocolate popcorn recipe and attach the recipe.

Amish friendship bread

A friend of mine blessed me with some wonderful Amish friendship bread. I loved the idea of passing it on to your friends. I was dying to share it with my MAGIC sisters from church. After searching the Internet I found this starter recipe

I made the recipe and put 1 cup in each ziplock bag. I added a label with the name and date. Finally I passed it out to all my friends along with a copy of these directions


I know I have said this before, but what DID we do before the Internet?

Snow days!

Since the kids have had2 snow days I thought we could finally get caught up on some projects. Last week I found 3 lonely Chia pets in my husbands closet. I decided it would be a fun project for the kids. We had to soak the seeds for 24 hours, good thing we got that extra snow day! Every time U look in the window I smile at Garfield, Shaggy and Einstein.

My daughter was begging me to make her favorite cookie dough cupcakes. You can get the recipe here

This is another 2 day project. You make the dough and freeze it overnight. Then you drop the dough in your cupcake mix and bake. I am a little lazy, so I used a box cake mix. It made 30 cupcakes and we have dough leftover for another time.

I love how the kids are amazed that the cookies do not bake inside the cupcakes. They don’t bake because they are frozen and do not have any egg in the dough mixture. It’s like a science project.
